In recent years, Echizen knife have gained a reputation for quality outside Japan as well. The origin of Echizen knife lies 700 years in the past. Chiyozuru Kuniyasu, a famous Kyoto swordsmith, came to Echizen in search of the perfect water to forge his blades and began making sickles for local farmers.
